To change a bit from the tabbouleh during summer picnics, I suggest an original and traditional salad. Original because the seed of couscous will be replaced here by quinoa and traditional because we will use a Swiss cheese of character : the Vacherin Fribourgeois.
For the story of this recipe, I started from my mother-in-law’s quinoa salad recipe and twisted it. Hes advice: There must be less quinoa than other ingredients :).

Quinoa Salad with Vacherin Fribourgeois (Swiss Cheese)
Ingredients
- 160 gr quinoa cooked and cooled
- 1 tomato big
- 1 cucumber
- 2 shallots
- 200 gr Vacherin Fribourgeois
- 1 bunch parsley
- 1 bunch chives
- 2 tbsp olive oil
Instructions
- Prepare all the ingredients. Cut the tomato into small cubes. Chop the shallots. Peel and cut the diced cucumber. Cut the swiss cheese in little dice. Wash and chop parsley and chives.
- Mix all ingredients. Place in the fridge 15 minutes before serving.
