I am a huge beetroot fan, as you can tell. I love everything red and sweet 🙂 ! This is the easiest recipe ever, but that’s also the best lunch box ever. A beetroot and shallot salad with oil and balsamic vinegar.

Beetroot and shallot salad
Ingredients
- 3 beetroot raw
- 1 shallot
- 2 tbsp balsamic vinegar
- 3 tbsp olive oil
- 1 pinch salt
Instructions
- Do not peel the beetroot and cook for 40 minutes in a pressure cooker. Like potatoes, to check if it is ready, pick a knife in it.
- Peel and dice beetroot.
- Peel and chop shallots.
- Mix beetroot with vinegar, oil and add just a pinch of salt.
