The recipe for mini tarts tatin with salted butter caramel

To revisit the traditions but not too much, here is the traditional tarte tatin in a mini version. A delicious caramelized apple pie that will revive your taste. Accompanied by a scoop of vanilla or caramel ice cream, a real treat.

What was my astonishment when Jacques, my mother’s neighbor, a pastry chef, who now works in the heart of Marseille, showed me the quantity of apples he used to make his tarts tatin…. Very much !

I wondered why every other time I found my pie all empty… Well now I understand why, I just didn’t put in enough.

When I arrived, he had peeled lots of amazing apples that he had simply cut in half and put them in a plastic bag to keep them from turning yellow. There’s also the lemon juice trick. To see what you prefer.

Anyway, he also showed me how he made his dough, but … I keep it warm for a future recipe. In other words, I have to do it, take a picture of it, etc … and I still have plenty of recipes in store to share with you beforehand :).

Anyway, in my recipe, I didn’t use her dough recipe. I put in some homemade puff pastry. For even more taste, you can make homemade puff pastry in its traditional version or even quick puff pastry, or shortcrust pastry for those who prefer! Finally, the choice of dough depends on your tastes.

The key to making these mini tarts tatin without fussing too much is taking a shortcut. In this recipe, no sugar. Add a teaspoon of salted butter caramel in a jar directly to the bottom of your mold.

For a well caramelized pie, you can make your homemade salted butter caramel, making sure it is very solid, or buy it in a store.

In short, it’s too good. Baking like a normal tarte tatin will take a long time, but … that’s life if you want to taste good things!

Apple tart tatin mini

Equipment

  • a 6 individual muffin pan

Ingredients
  

  • 6 apples
  • 6 tsp salted butter caramel
  • 1 puff pastry

Instructions
 

  • Peel the apples. Cut them in half and hollow them out.
  • Preheat your oven to 200 ° C.
  • In each mold, put a large teaspoon of salted butter caramel then place two apple halves.
  • Bake for 2 hours.
  • When the apples are tender, take them out of the oven and set them aside.
  • Cut puff pastry disks the size of your muffin tins.
  • Place on top of the apples, prick with a fork and bake for about 30 minutes.

Tips for successful mini tarts tatin

The quantity of apples is important, so we will put a whole apple per muffin pan. Avoid putting lots of apple pieces, but a whole apple simply cut in half.
The cooking time for apples is long. This is normal, they should be tender. Don’t stay in front of your oven and enjoy this well-deserved break!

Après cette expérience incroyable, je ne pouvais pas quitter la capitale sans tester ses autres adresses plus loin des étoiles mais encore un peu plus près du cœur, rue saint martin, ce sont les shawarmas et la cuisine libanaise traditionnelle qui sont à l’honneur avec entre autres avec le  @qasti.bistrot
