Mexican tortillas with spelt flour

This mexican week is ending with these Mexican tortillas with spelt flour. Of course that’s easier to buy them ready-made, the nice, round ones that you can see on the veggie fajitas recipe with egglplants pictures, I actually bought them… But that’s so much tastier to make them yourself. It’s so delicious, you cannot compare with the ready-made one. And to make them healthier, I am using spelt flour. Hope you like it!

I found this recipe in the book “Cocina Mexicana” de Sabor Perfecto that I bought in Oaxaca during our road trip in Mexico few years ago. Some friends of my husband family are living in Mexico city. We landed there, visited the city and we traveled to Playa del Carmen passing by Puebla, Oaxaca, San Cristobal de las Casas, Palenque, Campeche, Tulum and we left from Playa del Carmen with many kilometers under our belt. A big thank for our two drivers : Adrien et Moillen and to the Bayard/Moreno family to help us discover Mexico Mexican way.

Looking forward to see them again.

Meanwhile, we are eating mexican food at home. Alright that’s not really following the traditional way, but that’s also delicious with a french touch.

Ingredients
  

  • 350 gr. of flour spelt flour for me
  • 1 teaspoon of salt
  • 1/2 teaspoon of baking powder
  • 75 gr. of butter
  • 125 ml. of hot water
  • 2 sheets of baking paper

Instructions
 

  • Put flour in a bowl. Add baking powder and mix.
  • Make a hole, add salt, butter and warm water.
  • Mix with fingertips or using a food processor until you get a homogeneous dough.
  • Make 12 balls. Cover with a clean kitchen towel and let rest for 15 minutes.
  • Take 1 ball and knead again, add a bit of water if too dry or some flour if too wet.
  • Flatten with your hand on top of a baking paper. Cover with the other baking paper and roll finely trying to keep round the tortillas. Not always easy… reserve.
  • Repeat operation until you do not have anything left.
  • Heat some oil in a frying pan. Fry each tortilla on each side for 1 min until golden braun. Leave to cool without overlaping them or they will stick together while cooling. You can preserve them in your fridge once fryed covered with plastic wrap. They will harden.
  • To warm up and soften. Bring some water to a boil, Place a steaming basket or a cake rack on top and steam the first batch. Then stuff them!

Il y a quelques mois, j’ai eu la chance de découvrir une cuisine raffinée et authentique aux multiples saveurs mariant avec goût et créativité la gastronomie française et la cuisine traditionnelle libanaise au Restaurant étoilé d’ @alan_geaam à Paris. À tester absolument.

Après cette expérience incroyable, je ne pouvais pas quitter la capitale sans tester ses autres adresses plus loin des étoiles mais encore un peu plus près du cœur, rue saint martin, ce sont les shawarmas et la cuisine libanaise traditionnelle qui sont à l’honneur avec entre autres avec le  @qasti.bistrot

Et vous savez quoi ? Vous avez même plus besoin d’aller à Paris pour apprécier sa cuisine, son concept débarque en Suisse avec @qastilausanne et @qastilausanne.togo

Pas encore d'étoilé, mais on ne sait jamais, on peut toujours croiser les doigts🤞.
