Mexican tortillas with spelt flour

Ingredients
  

  • 350 gr. of flour spelt flour for me
  • 1 teaspoon of salt
  • 1/2 teaspoon of baking powder
  • 75 gr. of butter
  • 125 ml. of hot water
  • 2 sheets of baking paper

Instructions
 

  • Put flour in a bowl. Add baking powder and mix.
  • Make a hole, add salt, butter and warm water.
  • Mix with fingertips or using a food processor until you get a homogeneous dough.
  • Make 12 balls. Cover with a clean kitchen towel and let rest for 15 minutes.
  • Take 1 ball and knead again, add a bit of water if too dry or some flour if too wet.
  • Flatten with your hand on top of a baking paper. Cover with the other baking paper and roll finely trying to keep round the tortillas. Not always easy... reserve.
  • Repeat operation until you do not have anything left.
  • Heat some oil in a frying pan. Fry each tortilla on each side for 1 min until golden braun. Leave to cool without overlaping them or they will stick together while cooling. You can preserve them in your fridge once fryed covered with plastic wrap. They will harden.
  • To warm up and soften. Bring some water to a boil, Place a steaming basket or a cake rack on top and steam the first batch. Then stuff them!
