Fried chanterelle recipe

Yes, that’s right. This is mushroom time ! We got plenty of them on Lausanne’s Market. Unfortunately they are quite expensive … I should maybe go to the forest myself to pick them up ! But fried mushrooms are so tasty ! And fried chanterelles are just the best.

Fried chanterelle recipe

A bit butter, shallot, garlic clove and some parsley, that’s all you need to make these chanterelles even more delicious. You can even put some white wine just for the taste 🙂 !

This fried chanterelle recipe will goes well with a side dish, however you can also serve it as a main dish if you are a vegetarian or even if you aren’t. But if you do so, you will have maybe to increase the quantity of mushrooms per guests. Unless you want to starve 🙂 !

Tip : To get some fresh parsley all year long, I buy one bunch of parsley that I cut and keep in the freezer.

Ingredients
  

  • 300 gr. of Chanterelle
  • 1 shallot
  • 1 garlic clove
  • 2 tablespoons of fresh parsley
  • 10 gr. of butter
  • 1 pinch of salt

Instructions
 

  • First of all you have to take some time to wash all mushrooms. So better watch a movie on your tablet at the same time because it will take you sometimes. Or maybe listen to some music.
  • Take a knife and a kitchen brush.Cut the ruined parts and remove the dirt using the brush. Reserve.
  • Peel shallot and garlic after removing the green sprouts. Slice finely. Heat butter, fry shallot with garlic and parsley. Add chanterelles and cook 5 minutes on medium heat. Serve.
