French Onion Marmalade Recipe

It has already been a week! I hope you had time to bake my macarons! Did you like it? I wanted to share with you this week a recipe that I just love. Let’s see if you will enjoy it as well!

The onion marmalade or “confiture d’oignons” is usually served in France with Foie Gras for Christmas or New Year. Unfortunately my mother in law hates Foie Gras because of all of the different reasons you might now, but she loves my onion marmalade! So do not forget that you can also serve this jam alone on a toast. It is also very delicious!

Usually I take two different evenings one to do all the steps but without waiting that the wine is completely gone and the second evening I finish to reduce the wine and place in the fridge before serving. That’s easier this way.

Servings 30 toast

Ingredients
  

  • 600 gr sliced onions 5 cups or 1.32 lb.
  • 0.5 dl olive oil 3.5 tablespoons or 1.6 oz.
  • 3 dl red wine 1.25 cup or 10 oz.
  • 80 gr white sugar 0.4 cup or 2.85 oz.
  • salt
  • pepper

Instructions
 

  • Chop onions. Heat olive oil in a casserole dish. Cover and cook onions on low heat until they become translucent about 30 minutes. (Tip: If I want to save time and not stay in my kitchen I also add 3 dl. of water).
  • When they are well done, add red wine, white sugar as well as salt and pepper. (Tip: Don’t add the red wine before the onions are translucent as they will not cook anymore afterwards.)
  • Leave to cook until no more red wine about 1 hour.

        I usually have foie gras in a restaurant where it arrives in slice form on a plate with accompaniments…. However, I recently received foie gras in a jar (similar to your photo)… How do I serve this? Just leave it in the jar and let people take it out themselves?

          Hi Cheryl, I am so sorry for my late reply. If you have guest that do not care too much about presentation I would suggest to leave it in the jar, that way they will have the brand and you can discuss a bit about the product. Then cut it in 4 or 6 and give to each guest a portion that they can have on top of toasted bread with some French onion marmalade.

    This looks so delicious! I’ve tried onion marmalade before but only with breakfast foods, eg. soft eggs and sausage with toast. I don’t eat foie gras either but I will try this marmalade with some nice French cheese! Yum! xx

      I know that it is not really ethical but I just love Foie Gras. But I have tried it on a goat cheese and it was delicious!

    How heavenly! Caramelized onions make everything delicious, and I could happily slather this marmalade on just about anything- Edible or not- and relish every bite. A jar of this would also make a great gift for any avid cook or host/ess.

    How long does it keep – can you put it in jars as for others “jams” and store????

      Hello Margaret,
      I usually do not put in jars as everything is gone after two meals :-). I can also use onion confit leftovee to bake some tartlets. I store up to 4 days in the fridge and yes you can store using sterilised jars.

    Thank you so much for this recipe. I had foie gras with onion marmalade for new years in Paris and it was amazing (especially so when paired with champagne). I brought foie gras to the United States as a christmas treat for my family and wanted them to try it out. I was so happy to find this here. Do you mind if I refrence you in my blog?

Il y a quelques mois, j’ai eu la chance de découvrir une cuisine raffinée et authentique aux multiples saveurs mariant avec goût et créativité la gastronomie française et la cuisine traditionnelle libanaise au Restaurant étoilé d’ @alan_geaam à Paris. À tester absolument.

Après cette expérience incroyable, je ne pouvais pas quitter la capitale sans tester ses autres adresses plus loin des étoiles mais encore un peu plus près du cœur, rue saint martin, ce sont les shawarmas et la cuisine libanaise traditionnelle qui sont à l’honneur avec entre autres avec le  @qasti.bistrot
