Short pastry with spelt flour

I really wanted to create a section “The Basics”, because even if that’s quite handy to buy ready made food in the supermarket when we do not have any time, that’s also really nice to make some home-made pastry when we do have some.  That’s so more tasty and definitely more healthy ! So here I come with my short pastry with spelt flour.

This a simple short pastry that I made with some spelt flour, a flour that I use now almost everywhere, but you can also use white flour if you wish too.

Of course, that’s easier to use a kitchen machine; but you can also use your hand, if you are not afraid of elbow grease. Or maybe you got a comprehensive boyfriend/husband !

Before I using my hands or my thermomix. Thanks to my husband, who got me the best food processor ever for my 30 : a Kenwood. Now everything got easier. You pour all ingredients and that’s almost it ! The last time I bought a ready-made pastry … I cannot even remember !

That’s not cheaper, but we just live once ! So we have to enjoy every part of our lives !

Ingredients
  

  • 300 gr. of spelt flour
  • 100 gr. of diced butter
  • 1 dl. of water
  • 1 cc. of salt

Instructions
 

  • Pour all ingredients on your food processor and knead for 5 to 10 minutes until you get an homogeneous dough.
  • You can use it straight away or cover with plastic foil and refrigerate to conserve.

    I am interested in LO GI foods and trying non white flours, potatoes, rice and bread your spelt flour short pastry attracted me to your recipes . very impressed with straightforward recipe and quite good results (a little sticky had to add some more spelt ) but very good Thanks Tony

      Glad you liked it, sometimes depending on the flour you use, you have to adapt indeed water quantity :).

    Je vous remercie. I will be using this for my first spelt flour experiment!

    Just wondering about the dl and cc in the recipe. I’ve never seen that before; particularly the cc for salt. Is there an advantage over using weight measures?

      DL is a deciliter. CC is cubic centimeter. You can find conversions online.

      Hello Mike, it depends on the garnish but I usually bake it 30 to 40 minutes at 200°C.

Il y a quelques mois, j’ai eu la chance de découvrir une cuisine raffinée et authentique aux multiples saveurs mariant avec goût et créativité la gastronomie française et la cuisine traditionnelle libanaise au Restaurant étoilé d’ @alan_geaam à Paris. À tester absolument.

Après cette expérience incroyable, je ne pouvais pas quitter la capitale sans tester ses autres adresses plus loin des étoiles mais encore un peu plus près du cœur, rue saint martin, ce sont les shawarmas et la cuisine libanaise traditionnelle qui sont à l’honneur avec entre autres avec le  @qasti.bistrot

Et vous savez quoi ? Vous avez même plus besoin d’aller à Paris pour apprécier sa cuisine, son concept débarque en Suisse avec @qastilausanne et @qastilausanne.togo

Pas encore d'étoilé, mais on ne sait jamais, on peut toujours croiser les doigts🤞.
