Today, I will share with you a really easy recipe, but chosen especially to enhance the flavour of Olivers&Co olive oil and vinegar. The perfect recipe to go with the last barbecue or to plan a pic-nic. A recipe coming from our italian neighbors.
For the story, I happened to know Olivers&Co oil this winter. My mother-in-law bought me some for Christmas last year. She knows that I love cooking … She offered me a bottle looking more like a little barrel in fact together with a dispensing spout that you can clip on top. The months flew by and the sun arrived. One day, moving around with Adrien in the center of Lausanne, I told him : “Hey look this shop, let’s go in”. Usually, he doesn’t really like to go shopping especially with me (I can understand that) and he is also complaining that we got too many stuffs in our kitchen (yes, he is about right :)). Anyway, they were selling this tiny, beautiful little cutting board made of olive wood and Adrien thought this could be looking really nice in our appartment (and for the blog as well). I love him so much when I say some stuff like that ! Me so happy to be able to buy things without having to bargain I took few more stuff. At the cashier, the sales assistant put some more little bottles (oil and vinegar) in my bag. So to thank her, I though I could write present you her products.
Fresh tomato and mozzarella recipe with lemon olive oil
Ingredients
- 1 big tomato
- 1 mozzarella di Buffala
- 3 tablespoons of lemon olive oil
- 1 tablespoon of balsamic vinegar
- 1 pinch of salt flower
- 6 basil leaves
- some pepper
Instructions
- Slice finely tomato and mozzarella (Tip : use a bread knife, everything will get easier)
- Place in one plate.
- Chisel basil leaves. Mix with lemon olive oil, balsamic vinegar, salt and pepper.
- Brush on top of the tomato and mozzarella slices. Pour the left over on top and refrigerate until serving.
