I am working full time. So even if my boyfriend kindly does the grocery shopping for me; I have used cooked beetroots in order to quickly serve the dinner. But if you have more time; of course cooking fresh beetroot will be tastier!
Beetroot Carpaccio with Parmesan & Radishes à la Française
Ingredients
- 3 big beetroots
- 12 radishes
- 100 gr rocket
- 50 gr parmesan
- olive oil
- balsamic vinegar
- butter
- salt
- pepper
Instructions
- Slice finely the beetroots with a mandolin and place on the plate.
- Shave some parmesan cheese on top of the beetroots.
- Add some washed rockets.
- Wash the radishes and incise on top of them a cross.
- Add some butter and salt in this cross.
- Then add as you like some pepper, olive oil and balsamic vinegar. Really simple and delicious!
