I was travelling a lot when I was working for PADI. I was visiting dive centers accross Europe and some time even further… Visiting the dive centers, helping them to set up a proper e-marketing strategy and one day … South Africa … Thousand of kilometers in only few days to travel accross this gigantic country.
One day, the regional manager invited me in a nice restaurant serving some speciality of Mozambique. And as you might know by now I took some gambas with Peri-Peri sauce together with a fresh mango juice. That was so refreshing after all these days travelling intensively and eating fast-food. It came with white rice, that was delicious. I was returning to life as well as my stomac.
I love it so much that when Adrien came to join me at the end of this business trip so we could take some holiday at the Kruger Park we went to a Mozambican restaurant as well. And he found the food pretty good too !
Then I found myself again in my little kitchen in Switzerland with the aim of finding again this stunning taste. With my memories and some creativity, I mixed the flavours and got back the recipe ! or at least something really close !
Gambas recipe Peri-Peri sauce
Ingredients
- 200 ml. of olive oil
- 20 gr. of Peri-Peri pepper
- 2 garlic cloves
- 1/2 lemon zest
- 4 tablespoons of tomato sauce
- grounded fresh pepper
- 1 pinch of salt
- 8 gambas
Instructions
- Mix olive oil with Peri-Peri pepper, zest, garlic cloves, tomato sauce, salt and pepper.
- Pour on top of gambas after cutting them in two parts with a good knife.
- Marinate at least 30 minutes.
- Cook in a large frying pan for 5 minutes and serve.
