Instructions
Heat the olive oil in a cast iron casserole and return the finely chopped onions. Reserve the onions.
Brown the meat on both sides. Deglaze with white wine. Add the onions, the grated carrot, the zests of an orange and the juice of the two oranges.
Season with a pinch of cumin, pepper and salt.
Cook over low heat for about 2h30.
