Mix flour, cornflour, almond powder, sugar and salt. Add diced butter and the egg. Knead until you get a smooth dough.
Spread dough in a baking circle. Let stand approximately 1 hour in the refrigerator if the dough is too difficult to work.
Prick with a fork. Spread pear and apple sauce.
Peel and cut apples in thin slices. Arrange the apples on top of the pie.
In a small saucepan, heat sugar with 2 tablespoons of water. Do not mix. At best turn the pan slightly. Wait for the sugar to become liquid and color, turn into a caramel, then pour over the pie.
Sprinkle with some roasted hazelnuts.
Preheat oven to 200°C and bake for approximately 30 minutes.
