French vinaigrette dressing

olive oil

red wine/cider vinegar

Dijon mustard
a pinch of pepper
a pinch of salt
Instructions
Leeks
Wash leeks and remove edges.
Bring to a boil a casserole dish full of water.
Add leeks and a teaspoon of salt. Leave to cook for 25 minutes.
Drain and leave to cool.
Serve cold with a vinaigrette.
French vinaigrette dressing
Mix all ingredients.
